Malmaison Edinburgh is an independent editorial website focused on sourdough bread, fermentation, flour and practical home baking for readers in Canada. The name is a publishing brand; this site does not represent a physical bakery, hotel, restaurant or Edinburgh-based business, and it does not publish invented premises, opening hours, staff biographies, awards or customer reviews.

Our purpose

We aim to make sourdough easier to understand by treating it as a system. Starter condition, flour, hydration, dough temperature, fermentation, shaping and oven performance are connected. Our guides therefore emphasize observation and controlled adjustments rather than a single universal timetable.
